Being a cool growing region, the Eden Valley is one of South Australia’s best regions for growing Sauvignon Blanc. The benefit of a cooler growing climate is that the optimum picking window is widened, allowing aromatic full-flavoured styles to be made with a range of aromas encompassing all the variety has to offer. Southern of Eden Valley on the Springton to Williamstown Road Eden Valley side of the border to Adelaide Hills. Harvested during the night 21/3/22.
VINIFICATION
Free run juice no pressings 600l to 700l per ton. Cold stabilistation dropping titratable acids before bottling. 0.6g residual sugar per litre.
