Viticulture
Durif is an intriguing variety that is not widely planted in the world. It is relatively late-ripening and intensity coloured. The Barossa’s regular warm sunny days, with nights that are surprisingly cool for the uninitiated, ensure it can ripen fully without losing too much natural acidity. It may be blended with other, more widely-grown, varieties, or bottled without blending to show the dark, deep blue fruit characteristics that its trademark.

26 months maturation in 20% new Americian oak, with the balance in 40% one-year and old French oak and 40% American hogsheads.
