The 2021 Cimicky Cellar Selection exemplifies the traditional fruit-forward Barossa style Shiraz. It has full depth red colour with hint of crimson, on the aroma it displays lifted ground spice, prunes, plum, leather and chocolate. The palate is lush and juicy. We selected the barrels of wine which have the age potential. 26 months in oak barrel gives lots of roast nut, vanilla flavour and soft sweet tannins. The wine also be matured more than 12 months in the bottle before it’s released which make the wine more soft in palate. It can be enjoyed now or for up to eight years when stored under cool conditions.
