South Australia's Barossa Region has grown Cabernet since the early days of grape-growing in South Australia. Regular warm sunny days, with nights that are surprisingly cool for the uninitiated, ensure this moderate climate variety can ripen fully without losing too much natural acidity. Barossa Cabernet wines generally show less aromatic intensity than their peers from cooler regions, however, they compensate by their rich and generous palate depth. This richness is further reinforced by the plush middle fruit characteristics the Merlot brings to the blend.
