Tasting Notes:

Our Autograph wines represent the best of their variety that we produce each year. Featuring a dominant percentage of Cabernet Sauvignon (83%), this wine shows the fresh blackcurrant aromas typical of that variety, complemented by the dark plummy and slightly spicy fruit characters of ripe Shiraz. Coupled with 18 months maturation in French and American oak barrels, the raw fruit profile is tamed into a harmonious whole, benefiting from a cleansing acidic finish with a light tannin grip.

South Australia's Barossa Region has grown Cabernet since the early days of grape-growing in South Australia. Regular warm sunny days, with nights that are surprisingly cool for the uninitiated, ensure this moderate climate variety can ripen fully without losing too much natural acidity. Barossa Cabernet wines generally show less aromatic intensity than their peers from cooler regions, however, they compensate by their rich and generous palate depth. Shiraz grapes can also ripen fully here without losing too much of their natural acidity.

Cellaring

This wine may be enjoyed now for its freshness, but has the depth of flavour and structure to age for at least 10 years when stored under cool conditions.

Vinification
18 Months Barrel maturation in 67% French oak hogsheads, of which 29% new, and 33% American oak hogsheads, of which 2% new.
