South Australia’s Barossa Region has grown Cabernet since the early days of grape growing in South Australia. Regular warm sunny days, with nights that are surprisingly cool for the uninitiated, ensure this moderate climate variety can ripen fully without losing too much natural acidity. Barossa Cabernet wines generally show less aromatic intensity than their peers from cooler regions however they compensate by their rich generous palate depth.

A very dry Winter, Spring and Summer with warmer than average temperatures in January lead to a very earl;y harvest in Eden Valley. As a result 2019 was one of the lowest yielding vintages of the decade due to the extremely dry conditions, the resulting wines show outstanding fruit concentration.

Tasting Notes
This is the first release of an Eden Valley Shiraz for Cimicky. The higher and cooler subregion of the Barossa produces wines of great style and elegance whilst still carrying the hallmark generosity and intensity of the broader Barossa region. The wine has a vibrant medium to full crimson, colour with aromas if dark cherry, blueberry, black pepper and sage with nuances of cedar oak from ageing in French oak Barrel for 17 months. On the palate wild berries seamlessly integrate with complex dried herbs and violets with very fine complex dried herbs and violets with very fine tannins and great length of flavour. Our 2019 Eden Valley Shiraz will warmly reward those with patience to cellar the wine through 2040.
